Last Monday was my birthday! Thanks so much again for all the birthday wishes!
Used to for my birthday, I would eat way too crazy and feel terrible. Can I say leftover birthday cake shakes??? That is actually how we used to get rid of the cake and ice cream around here...blend it up! (I came up with that before the fast food places were doing it!)
But this birthday, I decided to treat myself to a well-balanced meal. SB did the cooking and I did the eating!
We had roasted cauliflower, taters & green beans (recipe in a previous blog), roasted asparagus, roasted sweet potatoes, roasted carrots, and SB's amazing collard greens. The little humm kombucha drink was the perfect sparkle for the occasion!
We got up and hit the gym really hard-it felt good to be the oldest I've been yet the fittest I've ever been!! I feel amazing. Then we hung out at the house and had a really chill day.

For roasted vegetables:
Wash and cut veggies
Toss lightly in oil and seasonings
Line baking pan with parchment paper
Bake for about 20-30 mins on 420-450 degrees. Roast to your liking!
